Join the senior team in our Kitchen Brigade of 18 Chefs creating award winning dishes across a range of fresh menu choices. Our Kitchen Brigade creates dishes for our 3 Rosette AG’s Grillroom, 2 Rosette Reflections Restaurant as well as our Banqueting, Room Service and Lounge operations.

The Role

  • Working with a team of 18 chefs and 5 Kitchen Porters
  • See our website for the full range of menu choices being created
  • Flexible shifts covering breakfast, lunch, dinner service including weekend working (5 days per week, shifts fall between the hours of 9am and 11pm
  • The menu planning, supplier resourcing, ordering, delivery, storage, preparation, cooking and service across the range of food areas within the Hotel
  • Ensure compliance with HACCP and food hygiene, health and safety legislation.
  • Development of menu ideas to progress the food offering to achieve rosette standards across all areas of service; restaurant, banqueting, afternoon tea, corporate functions
  • Assisting the senior chefs with recruitment, induction, training and coaching of employees
  • The passion and drive to contribute to the future success of the kitchen brigade who continue to develop award winning dishes
  • Ability to train, coach, develop, motivate and enthuse a young committed team to deliver excellent standards of cuisine across the full range of kitchen departments
  • The flair to contribute practical, costed and exciting dishes for our range of menus
  • Achieving rosette quality food while effectively managing the GP, stock and wastage
  • Ensure health, safety and hygiene standards are achieved meeting legal and company requirements


  • Quality experience in a fresh food environment
  • The passion and drive to contribute to the future success of the kitchen brigade who continue to develop award winning dishes
  • A proven record of managing, training, coaching and motivating a team of quality chefs
  • Ability to control GP and stocks
  • 2/3 Rosette experience required
